This is how I developed the chipotle chicken and veggie panini sandwich. I had some sauteed veggie leftovers and was looking for some way to use them. I had some Chipotle chicken lunch meat and sourdough French bread too.  It got me to thinking that maybe I could make some panini sandwiches. I started looking for panini recipes and there were some for veggies and some for chicken and all the recipes made use of a coarse crusty bread. I thought why not turn these ingredients into a sandwich. Most panini sandwich recipes have a meat, a veggie(usually tomato), some sort of cheese and a good coarse bread that can take the press method of the panini maker. Panini sandwiches looked like a good way to make use of leftovers.

Definition of Panini

I thought that I could add more flavor with an infused oil. The oil added to the bread by the use of a unstrained garlic infused olive oil. Then I could also add more flavor by adding a spicy mustard/mayonnaise spread to the sandwich. That made up the flavor profile. Flavors on the outside and inside the bread, flavor from the chicken, cheese, and the veggies this should be good.

My leftover sauteed veggies consisted of zucchini, red bell peppers, onions, and carrots. I believe that almost any sauteed or roasted veggies will work. Basically, the veggies take a backseat in the flavor lineup of this sandwich.  Chop the veggies into 1/2″ pieces to make the sandwiches easier to assemble.

I had Chipotle chicken lunchmeat in the frig. so that’s what I used. I believe that your favorite lunch meat or leftover meat would work with this sandwich combination, in case you don’t have Chipotle chicken lunchmeat. The cheese I had on hand was cheddar and I had some 3 Mexican cheese blend cheese. I used the cheddar since I was trying the sandwich out for the first time. The sourdough french bread was perfect for this sandwich. It is coarse enough to take the press method without pressing down into a dough ball. An artisan or ciabatta bread would also stand up to the press method.

Chipotle Chicken and Veggies Panini Sandwich

Ingredients

    • 8 oz Chipotle chicken lunch meat
  • 1 1/2 cups roasted veggies
  • your favorite cheese shredded
  • 4 slices of a round French bread loaf
  • 2 tbsps. spicy mustard
  • 4 tbsps. mayonnaise
  • 3 tbsps. olive oil
  • 1 tsp. minced garlic
  • salt and pepper to taste

Directions Prework

  1. Blend the mustard and mayonnaise in a small bowl
  2. Mix the olive oil and minced garlic in a small oven-safe bowl and infuse the garlic into the oil. Set aside to cool.
  3. Slice in half the 4 slices of French bread.
  4. Chop the roasted veggies into approximately 1/2″ pieces

Preheat the Panini Press to 400º

  1. Assemble the sandwiches in the following order on the bottom slice of French bread.
  2. Brush the outer part of the French bread slices with the garlic infused olive oil mixture.
  3. Brush the mustard-mayo mixture on the inner part of the French bread slices.
  4. Sprinkle cheese on the bottom slice.
  5. Layer the Chipotle chicken on top of the cheese.
  6. Add 2 tbsps(more if you have it). of chopped roasted veggies to each of the sandwiches.
  7. Sprinkle cheese on the roasted veggies.
  8. Top with the remaining prepared French bread slice.
  9. Put two sandwiches on the hot Panini press and cook until the cheese melts and the French bread gets crisp and browned.

There you have it Chipotle Chicken and Veggies Panini. Serve with a green salad or your favorite side dish for sandwiches.
