Apple Butter On Banana Nut Bread

I love No Sugar Added apple butter. What if you could cook up a great crockpot of apple butter that is No Sugar Added? For years I was buying a No Sugar Added apple butter from the supermarket. Unfortunately, they stopped carrying the brand. I was stuck, no apple butter, and my source had dried up.  So I started looking for a sugar-free or No Sugar Added apple butter recipe. I viewed several videos on the making of apple butter and kept track of the techniques they used. I knew that when the search was over I wanted the perfect recipe for me. This is the recipe that I developed and have been using since I started to make my own apple butter.

What’s Important To Know and Use

    • Use an Immersion blender when the apples are soft-cooked to speed up the cooking process.

    • Use non-tart apples, Fuji’s are really good.

      Immersion Blender Use

    • Peel, thinly slice, and core the apples.
    • The finished apple butter will be spiced with cinnamon, cloves, and allspice.
    • Apple cider vinegar will give it a kick but not overpower the apple flavor.
    • No Sugar Added, the apples provide all the sugar you need.
    • It will have a dark brown color to it and has a sheen when it is done.
    • Use the upside-down spoon technique(see below) to check for consistency.

Some cooks use the non-movement or water separation methods of the apple butter on a cold plate, I don’t, I just cook the apple butter until it is thick. Thick enough so that the apple butter doesn’t fall off a teaspoon turned upside down(see video below). This is the test I use. I feel that this test delivers more consistent results. This results in an apple butter that is very dark and spreadable on bread or bagels and is definitely not runny.

The Recipe

Ingredients

  • 10-12 pounds of Fuji apples
  • 1/2 cup apple cider vinegar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground allspice

Directions

  1. Peel, core, and thinly slice the apples using a machine like this one.
  2. In a crockpot set to high, place apples and vinegar cover and cook covered overnight(approximately 8 hours).
  3. Use an immersion blender to puree the apples.
  4. Set crockpot to Low, and cook the apples covered for another 8 hours.
  5. Stir in cinnamon, clove, and allspice, and cook the apples covered for an additional 4 hours.
  6. Uncover the crockpot and reduce the apple mixture until you can execute an upside-down spoonful of apple butter.

The Finished Product

The finished product will be:

      • Dark from the cooking and spices.
  • Very thick, so thick that a teaspoon full of apple butter can be turned upside down and the apple butter will not leave the spoon.
  • The apple butter will be sweet from the sugars already in the apple. Hence No Sugar Added.
  • The flavor of the apple butter will have a special kick from the apple cider vinegar but have no vinegar flavor.
  • So darn good you won’t share with anyone. But you will share the recipe(I hope).
  • Your house will smell yummy for a couple of days.
  • The apple butter can be stored if you use a proper canning method or if properly frozen.
