My coleslaw Recipe

This is the coleslaw recipe I use for the California Reuben Sandwich. This recipe is inspired by the Betty Crocker Cookbook. The one cookbook that my wife has held onto for her entire adult life. Over the years we have made this recipe our own. She has adjusted it to our likes and dislikes.

Diabetic friendly

This is a mayonnaise-based coleslaw with a slight variation. She has removed some of the mayonnaise and substituted ranch dressing. She also adds 2 sweetener packs to the dressing as she likes it a little sweet. Substitute sweetener for sugar.

Ingredients:

  • 1 package of three color coleslaw mix
  • 1/4 cup chopped onion
  • 1/2 cup sour cream
  • 1/8 cup mayonnaise
  • 1/8 cup of ranch dressing
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon dry mustard
  • 2 packets of sweetener
  • Dash of pepper
  • Dash of paprika

Directions:

  1. Combine the cabbage and onion in a large bowl.
  2. Prepare the dressing by combing the remaining ingredients.
  3. Pour the dressing and toss to coat evenly.
  4. Refrigerate and allow the flavors to meld for at least 6 hours.
 This coleslaw is used in the following sandwich recipe.
